Two layers of foil. It still leaked.

You know the moment. Everyone's at the table, and you lift the roast out of the oven.

And the foil tears right where you didn't want it to.

Now there's juice running down the oven door. Drippings burning on the oven floor. And a smoke alarm going off in the middle of Thanksgiving.

The pan? It's soaking. It'll soak till Sunday, and you'll still end up at the sink with steel wool.

So you've tried. Foil tears and leaks underneath. Disposable pans bend the second you lift them. Parchment soaks through. And the good roasting pan works, right up until you have to scrub it.

Because the worst part of Thanksgiving was never the cooking. It's the kitchen the next day.

Here's the thing nobody tells you

Foil was never made to hold anything.

It's a wrapper. So every holiday, you've been asking a wrapper to do a pan's job.

What you actually need is simpler than that. Something that holds the drippings while it cooks, and lets go of them when it's done.

Meet the snap tray

It's a roasting tray when you're roasting. And a flat mat the second you're done.

Four corners snap up, so the walls hold every drop the roast lets go. Then they snap flat again, so the mess has nowhere to hide.

Three easy steps. Four clicks.

1. Snap the corners. Eight snaps, two per corner. The flat mat becomes a tray.
2. Roast. Straight on the oven rack, or inside your sheet pan. Ham, chicken, a turkey crown, wings, bacon.
3. Lift, unsnap, peel. Lift the roast out, pop the corners flat, and peel the baked-on layer off.

Why hosts keep one in the drawer

Try it on one dinner. Then decide.

Snap the corners, roast your next dinner on it, and peel it clean. See it work in your own oven, with your own roast.
